Recipes That Shaped How
the World Knows Indian Food.
The Moti Mahal story began in 1920 in Peshawar, where Kundan Lal Gujral moved an ordinary clay tandoor—traditionally used only for baking village bread—into the centre of a restaurant kitchen.
That solitary decision transformed Indian cuisine. Whole chicken marinated in yogurt and hand-ground spices was lowered over live charcoal to create Tandoori Chicken. Later, to keep roasted cuts succulent, a velvety reduction of ripe tomatoes, churned butter, and gentle spices was created—introducing Butter Chicken. Beside it, black lentils simmered unhurriedly overnight to produce Dal Makhani.
After Partition in 1947, Moti Mahal re-established itself in Delhi’s Daryaganj, quickly becoming an essential table for leaders, visiting dignitaries, and families who loved rich, deliberate cooking.
Today at Windsor Street Market in Indirapuram, that culinary lineage is preserved with equal care: the same charcoal heat, the same time-honoured marinades, and an abiding respect for the craft.
